$100 groceries for 10 days

To stay on budget this month I challenged myself to come up with 10 days of meals for our family with only $100 and the few things in our pantry and freezer. I hope this gives you ideas for cheap meals and how to stretch that grocery budget farther. Turns out I only spent $76! And it feels great to be on budget for our future goal of paying off our house. (I’ll link the recipes I used below.)

I have budget meal tips and lots of recipe ideas. Also, there’s homemade pasta at Nonni’s house, my best friend laughing at my crazy idea and my kids reaction to the interesting meals I came up with!

  1. I have a super easy and good chicken pot pie recipe. This is my go to recipe to take to people who have had surgery or had a baby, & I always get rave reviews about it.
    Ingredients:
    1 package of store bought pie crusts (or you can make your own)
    1 can cream of chicken soup (undiluted)
    1 can mixed vegetables
    1 can of chicken (You can use shredded chicken you’ve made yourself)
    *optional: a pinch of a chicken soup base

    Thaw pie crusts. Mix up chicken, soup, & mixed vegetables. Put mixture in one pie crust. Place the other pie crust in the top. Pinch the edges together. Cut a slit in the top. Bake at 350 degrees for approximately 30 minutes or until it’s golden brown.

  2. I do almost the same recipe but instead of a crust I use stuffing mix, you put about. 1/4 cup water or stock in a bowl with the uncooked stuffing and mix it until it’s wet and put it on top and bake it, it’s a nice crunchy topping
