To stay on budget this month I challenged myself to come up with 10 days of meals for our family with only $100 and the few things in our pantry and freezer. I hope this gives you ideas for cheap meals and how to stretch that grocery budget farther. Turns out I only spent $76! And it feels great to be on budget for our future goal of paying off our house. (I’ll link the recipes I used below.)

I have a super easy and good chicken pot pie recipe. This is my go to recipe to take to people who have had surgery or had a baby, & I always get rave reviews about it.
Ingredients:
1 package of store bought pie crusts (or you can make your own)
1 can cream of chicken soup (undiluted)
1 can mixed vegetables
1 can of chicken (You can use shredded chicken you’ve made yourself)
*optional: a pinch of a chicken soup base
Thaw pie crusts. Mix up chicken, soup, & mixed vegetables. Put mixture in one pie crust. Place the other pie crust in the top. Pinch the edges together. Cut a slit in the top. Bake at 350 degrees for approximately 30 minutes or until it’s golden brown.

You could also top w/biscuits instead by omitting the pie crusts.

I do almost the same recipe but instead of a crust I use stuffing mix, you put about. 1/4 cup water or stock in a bowl with the uncooked stuffing and mix it until it’s wet and put it on top and bake it, it’s a nice crunchy topping
