Wait! Don’t go. I know the word “kale” is in the title, but give me a chance! Maybe you’ll hear me if I tell you I don’t like salad. I don’t. I have to stop from crinkling up my nose to eat it. Even if there’s bacon in it. But I actually like these kale chips!
My mom made this a few times over Christmas and I got hooked. The first time she set it out on the counter I rolled my eyes and stuck a piece in my mouth — kind of so I could just make fun of her. I know, aren’t I the sweetest? But it was really good! I sat there and ate the whole tray while she made dinner. I’m not painting myself in the best light, but you get the idea. The kale chips are good! And very healthy.
Kale is one of most nutrient-dense foods on the Earth. It contains:
- Vitamin A
- Vitamin K
- Vitamin C
- Vitamin B6
- Calcium
- Copper
- Potassium
- Magnesium
- Beta carotene
- Omega-3
- antioxidants (quercetin and kaempferol)
They’re also easy peasy and work great for a snack or a side dish. Two out of my three kids will eat them, and they are all super picky, so that tells you something. I also stick handfuls of raw kale into smoothies with a banana, frozen berries and almond milk for the family.
