Easy peasy taco salad dinner recipe

Looking for an easy dinner for tonight? I am always looking for a simple meal that will please everyone in the family. And the best part is that this only takes about 20 minutes and hits the spot. Get ready for the super yummy sauce you can’t believe you have never thought of at the end.

Ingredients

  • 1 pound of ground beef
  • 1 can of black beans
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 bag romaine hearts
  • tortilla chips
  • halved cherry tomatoes
  • avocado slices
  • shredded cheese

Directions

  1. Brown ground beef. Drain.
  2. Add black beans and seasoning packet with 1/4 cup of water. (Also optional: onions and/or rice.)
  3. Layer everything in a large bowl. I put meat on the bottom, then cheese, lettuce and toppings. That way the cheese gets a little melty and the less-attractive ground beef is less visible. Layering also helps dig out what the picky eaters want.

And can I interest you in an elective topping? Half ranch and half salsa. Yes, you heard that right and it’s as delicious as it sounds.
